Dampudu biyyam (దంపుడు బియ్యం) literally means pounded rice – rice that was hand-pounded at home rather than machine-polished, so most of its bran stays on. In English it is unpolished rice or brown rice. Ours is unpolished rice grown by our partner farmer NGOs.

How to cook dampudu biyyam
- Rinse and soak for 30–60 minutes.
- Use about 2½–3 cups of water for 1 cup of rice (a little more than white rice).
- Pressure-cook for 4–5 whistles, or simmer covered until soft. Rest for 10 minutes before serving.
